Ingredients

1 (13.5oz.) can Fiesta Tropicalé Organic Coconut Milk

8 oz. fresh spinach

1 large tomato, diced

1 small yellow onion, diced

1/4 cup water

2 cloves garlic, minced

1 Tbsp. grated ginger

2 Tbsp. olive oil

2 tsp. ground cumin

1 tsp. garam masala

1/2 tsp. turmeric

¼ tsp. cayenne pepper

3/4 tsp. salt (or to taste)

Gently heat coconut milk and spinach in a large pot over medium heat until spinach is just wilted.

In a separate pan, sauté onion, garlic, and ginger in olive oil until softened. Add cumin, garam masala, turmeric, and cayenne to the skillet. Cook for 2 minutes.

Stir in tomato and 1/4 cup water. Cook for about 8 minutes. Add coconut milk and spinach to the pan and, gently stir until well combined. Add salt to taste. Serve and enjoy!
