Ingredients

4 Tbsp. butter

1/2 large onion, chopped

3 shallots, chopped

1 tsp. curry powder

1 tsp. ground ginger

4 cups chicken stock

1 cup coconut cream

2 cups pumpkin puree

½ cup maple syrup

Salt and pepper to taste

Sauté onion and shallots in butter in a large stockpot.

Add curry and ginger, stirring frequently.

Add chicken stock, coconut cream and pumpkin, stir well.

Let simmer for 15 mins, then use an immersion blender to blend until smooth.

Add maple syrup, stirring well. Add salt and pepper to taste.
