Ingredients

  • 7 cups Fiesta Tropicalé Unsweetened Organic Coconut Flakes

  • 14 ounces sweetened condensed milk

  • 1/4 cup confectioner's sugar

  • 2 Tbsp. butter, melted

  • 1 tsp. vanilla extract

  • Food coloring

Mix together condensed milk, melted butter, and vanilla extract in a large bowl.

Add 5 cups of shredded coconut flakes and confectioner's sugar. Stir until well combined. Chill mixture for 15 minutes.

Divide remaining 2 cups coconut flakes into small bowls, 1/2 cup coconut in each bowl. Add 3-4 drops food coloring of choice into each bowl. Mix coconut and food coloring thoroughly.

Scoop 1 1/2 tsp. of coconut and sugar mixture and roll into balls. Roll balls in colored coconut.

Transfer to a baking sheet and chill until coconut balls are set, around 1 hour. Serve and enjoy!
