Ingredients

1 cup butter, room temperature

2 cups granulated sugar

4 eggs

2 tsp. vanilla extract

1 cup unsweetened cocoa powder

1/2 tsp. salt

1 1/2 cups all-purpose flour1 cup mini chocolate chips
For the Filling:

4 cups Fiesta Tropicalé Organic Shredded Coconut

1 (14 oz can) sweetened condensed milk

2 tsp. vanilla extract

Preheat oven to 350°F. Line a 9×13 baking tray with parchment paper. Coat with nonstick spray and set aside.

Using a Cream together butter and sugar on medium speed for 1-2 minutes until combined. Add eggs and vanilla, mixing for 1 minute until smooth.

Turn mixer to low and add in cocoa powder and salt. Mix until incorporated. Add flour and mix until combined. Stir in chocolate chips. Pour half of the brownie batter in the bottom of the prepared pan.

For the coconut filling, stir together shredded coconut, sweetened condensed milk and vanilla. Spread coconut mixture evenly on top of brownie batter. Top coconut mixture with remaining brownie batter.

Bake for 40 minutes, or until the brownies are just set.

Let brownies cool completely. Slice into bars. Top with coconut flakes. Enjoy!
