Holiday Coconut Cookies

1/2 cup butter
3/4 cup granulated sugar
1 large egg
1 cup all-purpose flour
1 cup Fiesta Tropicalé Organic Shredded Coconut
Preheat oven to 350°F. Line a cookie sheet with parchment paper.
Cream softened butter and sugar in a bowl until smooth. Add egg and mix until light and fluffy.
Add flour, shredded coconut and combine well.
Drop dough by heaped teaspoonfuls onto tray. Space out dough as cookies will spread and flatten as it bakes.
Bake for about 10 minutes or until lightly golden. Cool on wire racks and enjoy! Decorate with frosting and sprinkles.
